Cinnamon Apple Infused Death’s Door White Whiskey

I have been lucky enough to work with Death’s Door this year and because of that I was able to create Vintage Grinds first infusion. I used the Death’s Door white whiskey and infused it with cinnamon and apple. This made a great flavored whiskey that easily works in multiple cocktails. I will let you know how to make your own Apple Cinnamon Death’s Door white whiskey.

First you have to realize that the cinnamon can easily overtake the apple. The apple takes a little longer to to flavor the whiskey. I recommend adding the apple first letting them sit in the Whiskey for about 4 days. I would use a half apple per 250ml a standard bottle is 750ml, you would need a apple and a half for a full bottle. I always slice the apple my 8 slices when infusing apple fruit into spirits.

After the first four days I remove the apple slices and add fresh ones. This is when I add the cinnamon; one cinnamon stick per 500ml will get the desired effect. If you want to add a second stick that is fine but remember the cinnamon will set quite strong. You will want to let this set for about 5 days. Then you can remove the apple and cinnamon stick or leave them in and let the infusion continue.

Once you have your infusion there are a few things you should know right off the bat. First neither the apple or cinnamon has a lot of natural sweetness. This means the nose will tell you it is fine to just sip like it is a cordial; it is not! You will smell the apple and cinnamon and a faintness of butter and think wonderful; but when it hits the tongue something will be missing. That something is sweet, this should be added to taste and will change everything about this infusion.

There are a great number of things you can do with this infusion. Everything for a mint julep to simply adding soda water and simple syrup. Two things stood out, one is a Snow White Ice-tea the other Cinnamon Apple Manhattan. The reciepes for these cocktails are listed below. Take your time and enjoy the flavor of the infused Cinnamon Apple Death’s Door White Whiskey.

Snow White Ice-tea

  • 2 oz. Infused Cinnamon Apple Death’s Door White Whiskey
  • 1 ½ oz. of Simple syrup
  • 4 oz. of Ice-tea

Garnishh with one apple slice and cinnamon stick

Directions: pour the infused Cinnamon Apple Death’s Door White Whiskey, simple syrup over ice. Then add the cinnamon stick and pour the Ice-tea over the ice with the other ingredients. Then shake to combine the ingredients. Finally pour it into a highball glass, garnish it with a slice of apple and enjoy.

Cinnamon Apple Manhattan

  • 2 oz. Infused Cinnamon Apple Death’s Door White Whiskey
  • 1 oz. Sweet Vermouth
  • Dash of bitters

Garnish with a apple twist

Directions: Pour the Infused Cinnamon Apple Death’s Door White Whiskey, sweet vermouth and a dash of bitters over ice and shake. Then take an apple and peel a full ring of the skin off the apple for a garnish. Strain the shaken ingredients into a up-cocktail glass(martini glass) and drop the apple twist into the cocktail… enjoy!
