Kah Chipotle infused Blanco

Now that summer is in full swing it is time to enjoy a cocktail. What better way to do then with a little sweat smoky spice in your life; with a chipotle infused Kah blanco tequila… how you ask? Well you need some chipotle peppers and at least 6hrs of waiting time.

Kah is one of my favorite tequilas and I have taken the time to infuse some of the blanco tequila for the summer months. I have started with a spicy little devil and chose the chipotle pepper because it is a bit milder than others and it has a smokiness to it that is appealing.  Once I had this elixir of the dead (just kidding) then I thought what next. It wasn’t long before I had a margarita in my hand. I then thought of a friend Dave that was telling me about a jalapeño watermelon cocktail he was making.  I already had watermelon juice for the By Days End cocktail and decided to play around with my own concept of a drink. It was perfect I call it El Dragon Muerto (The dead Dragon) Kah’s day of the dead concept helped me land on the name.  At the end of the day I realized that it was a great idea to have a chipotle infused tequila and will become a summer rotation for me.

The infusion of the peepers starts in about 6hrs and doesn’t seem to get out of hand if you let it sit.  The flavor builds but the spice seems to reach a max level and stops getting spicier. I have had two peppers in tequila infusing for 2 weeks without a level increase in about 8 days. It is a perfect way to enjoy tequila and a better way to enjoy the summer.

El Dragon Muerto

2 oz. Kah chipotle infused blanco tequila
3 oz. watermelon juice
½ oz. lime juice
½ agave syrup
5 dashes of chocolate  bitters

Directions: in a Boston glass over ice pour all the igredents juice and syrup first then bitters last the Kah chipotle infused blanco. Shake hard and then strain over fresh ice in a double old fashion.

Cali-rita

1 ½ oz. Chipotle infused Kah Blanco
1 oz. Cointreau
2 oz. Fresh lime juice
½ oz OJ
1 oz. Agave Syrup
Garnish chipotle pepper or lime slice

Directions: in a Boston glass over ice pour all the ingredients juice and syrups first and then the Kah infusion and the Cointreau. Shake hard strain over ice in a hi ball glass or double old fashion glass. The other option is to double strain to remove all the ice chips in a margarita glass or cocktail glass (coup or up glass works) and then garnish with a lime or chipotle pepper.

Kah Chipotle infused Blanco Tequila

500 ml you will need 2 dried chipotle peepers drop them in and wait about 6hrs before checking the taste. After the 6hr mark I would check on it every 12hrs to see how spicy it is and then you can get a base for when you should remove the peppers. After about 6 days it will not get more heat unless you add more peppers which is always an option from the beginning.
