Art in the Age Rhubarb tea is perfect for this time of year when everyone is looking for a refreshing cocktail to keep the party alive. Once I started playing around with making a soda or shrub cocktail with the Rhubarb Tea it was only a matter of time before I made a sour and it is a good one.
With raspberries and touch of lemon juice, I was on the road to a sour cocktail that was refreshing, simple and easy to drink. Which is exactly what is needed in these late days of spring as we wait for those lazy summer days followed by wild summer nights. South of Rhubarb ST. is the cocktail that will have you wanting more of the Rhubarb Tea as you enjoy it over and over again.

2 oz. (60ml) Art of the Age Rhubarb Tea
¾ oz. (23ml) Lemon juice
¾ oz. (23ml) Simple syrup
1 egg white
When dealing with an egg in your cocktail you always want to start there so if for any reason you need to discard the egg you only lose the egg. After the egg is safe and in the bottom tin or Boston glass drop in the 2 raspberries (bruise them if necessary) add the lemon juice, then simple syrup finally the Art of the Age Rhubarb Tea. Fill with ice shake and then double strain back into the tin, throw out the ice then dry shake the cocktail till you have a good foam, pour into a cocktail coup and enjoy.
